Start by measuring out two cups and half of the all-purpose flour into a large mixing bowl.
Add 5 teaspoons of baking powder. 5 may seem like too much, but this is the dern(key) to getting the softest, fluffiest delicious pancakes.
As the pancakes cooks, the baking powder is going to react and create a lot of air, giving you that perfect fluffy pancake texture.
Over to the dry ingredients
Add a pinch of salt. You can also add sugar, I insist on adding the sweetness at the end of the pancake is cool, but it is up to you.
Use a wooden spoon to mix the dry ingredients together until they blend. Set the bowl to the side.
In another bowl
Use a smaller bowl to mix together the wet ingredients.
Crack and add your raw egg(s)
Add your milk, any type of milk Diary, Soy, almond any type will do the trick.
Add in a 1/4 cup of cooled melted butter.
Use a fork to mix everything together, making sure the egg is well blended.
Add a teaspoon of vanilla, its a matter of choice though.
Back to the big bowl
Make a pit or opening in the flour and pour in the wet ingredients.
Fold the batter together with a wooden spoon until there are no longer any large lumps.
But make sure you’re not over-mixing as this will lead to your pancakes being quite tough.
I am giving you a basic pancake but if you want to step it up a notch you can add your flavor here.
Lets Cook This Fluffy Pan Cake, Shall We?
Heat the pan over a not so blazing heat.
When the pan has heated add a small amount of butter to the pan to melt.
Scoop out about a 1/2 of a cup of the ingredients from the big bowl and pour it into the pan.
Leave the pancake to spread on its own and cook for a few minutes. You’ll know it’s ready to flip when air
bubbles start to form on the top. If you are unsure, using a spatula, lift up the side and check the bottom.
Flip and cook for a further few minutes on the opposite side. If your pancakes are browning a little too quickly, you are to adjust the heat.
Place the cooked pancake on a plate and repeat with the next.
It is ready for serving.
